Easy, Yummy, Versatile Oatmeal Muffins - Gluten Free

These muffins are so simple to make and you can get creative with options to add to the batter depending on what you and the fam enjoy! I have found these muffins to be very forgiving i.e. whatever I add in seems to work!

Kudos to Shelley Latendresse who introduced this to me via her Flavours of Savary Cookbook. ❤️My teens love these - adding banana and blueberries or apple slices and cinnamon are the current faves!

Ingredients:

  • 1 cup gluten free rolled oats

  • 1 cup soy or oat or almond milk

  • 1/3 cup coconut oil or ghee

  • 1/3 cup honey or maple syrup

  • 1 egg, beaten

  • 1 cup oat guten free oat flour

  • 1 tsp salt

  • 1/2 tsp baking soda

  • 1 tsp baking powder

Flavour options. Add 1 cup of your choice of the following:

  • thinly sliced apple with 1 tsp of cinnamon

  • chopped dates with 1 tsp orange zest and a pinch of cloves

  • diced banana with chocolate chips or blueberries

  • grated cheese

  • toasted nuts

  • blueberries or other berries

  • freestyle create your own!

Instructions:

  1. Preheat oven to 375 F

  2. Combine the oats and milk, let sit for 10 minutes.

  3. Gradually add the oil, honey/maple syrup, eggs, mix thoroughly.

  4. In a separate bowl combine all the dry ingredients.

  5. Gently stir the dry and wet together.

  6. Add your favourite flavour combinations.

  7. Scoop into muffin papers and bake for 20-25 minutes until firm to the touch.
