Gluten-free, Dairy-Free Chocolate Sweet Potato Brownies That Everyone Will Love!

This week I had a big bag of sweet potatoes to use up and was googling sweet potatoes recipes. I found this idea and recipe for sweet potatoes brownies by Lisa Bryan and I made a couple tweaks and made a batch with a friend.

Here’s what happened: my teenage daughter tried a bite and said (surprised), “huh. mom these are actually fire” and proceeded to take some to school for her and her friends. To me this comment and her action means that the general public (ie not only super healthy people) will definitely enjoy these!🙌🙂 So enjoy!

WET INGREDIENTS

▢ 1 cup sweet potato puree (I use 2 sweet potatoes). * I often make a batch of sweet potatoes at home to have on hand to add to meals - after baking them, I remove the skin and mash up the potatoes.

▢ ¾ cup almond butter (or other nut or seed butter)

▢ 2 tablespoons ghee or coconut oil

▢ 1 teaspoon vanilla extract

DRY INGREDIENTS

▢ ½ cup cacao/cocoa powder

▢ ¼ - ½ cup coconut sugar

▢ ¼ cup tapioca flour (or arrowroot flour)

▢ 1 teaspoon baking soda

▢ ¼ teaspoon celtic/grey salt

▢ ¼ cup mini chocolate chips (I like the Lily or Camino bittersweet brand)

INSTRUCTIONS

  1. Bake 2 sweet potatoes until tender when poked with a fork. Mash until smooth.

2. Preheat the oven to 350°F. Line pan with parchment paper. * An 8 x 8 pan works great if you have one - I’ve used a glass pie plate and it worked fine.

3. Mix the wet ingredients together well: sweet potato, almond butter, oil, and vanilla extract.

4. Add the dry ingredients: cacao/cocoa powder, coconut sugar, tapioca flour/arrowroot, baking soda, salt and mix until fully combined. Gently fold in the chocolate chips.

5. Transfer the brownie batter into the pan and use another piece of parchment paper or a knife to smooth the top so its even and flat in the pan. Top with a few extra chocolate chips if you like.

6. Bake for 25 - 30 minutes, or until the brownies are set, but still soft in the center. * I have kept them in as long as 35 minutes.

7. Let them cool for 30 minutes in the pan.
