Coconut-Chocolate-Peppermint Nut Balls

Here’s a simple to make, tasty protein (and fibre) snack that has a festive vibe thanks to the coconut and peppermint!

Ingredients you need:

  • 1/2 cup nut butter of your choice

  • 1/3 cup honey

  • 2 tablespoons cocoa powder

  • 1-3 drops of food safe peppermint essential oil or peppermint essence (adjust to taste preference)

  • 1/4 cup fresh ground flaxseeds (keep your ground flaxseed in the freezer or grind it fresh if possible to get all the health benefits)

  • 1 cup rolled oats

  • 1/3 cup shredded coconut

  • Optional (FYI I would argue that it’s optional🙌): mini chocolate chips - I like the Lily brand and start with 1/2 cup and play around with the amount as I like.

Instructions

  1. Mix nut butter and honey until smooth.

  2. Add in peppermint, cocoa, flax and oats.

  3. Stir until well combined and a bit wet to the touch.

  4. Roll the mixture into small balls (10-12) using about 1 Tbsp of mixture per ball,

  5. Roll the balls in coconut to coat and refrigerate for a minimum of 30 mins.
