Yummy Healthy Brownies

My friend and colleague Mandy LeBlanc is a master at making yummy foods healthy. Here’s a recipe she shared with me that is wonderful for all of you health-conscious brownie lovers!

I adapted it a little but essentially Mandy has created an adrenally supportive brownie recipe for you to enjoy that nourishes your palette while elevating your capacity to deal with stress (through sneaking in some favourite adaptogenic herb/medicinal mushrooms into the mix). Enjoy! ❤️.

Base layer
1 1/2 cups pitted soft medjool dates
1/3 cup nut or seed butter of choice ( cashew, almond, almond-hazelnut)
1/4 cup cacao powder
1 tsp vanilla extract
1 tsp ashwaganda powder
1 1/2 tsp Reishi or Cordyceps (adaptogenic mushrooms)
1/4 tsp celtic salt

  • Add all ingredients to a food processor and process until it makes a smooth dough, adding a teaspoon of water at a time as needed.

  • Press into a parchment paper lined loaf pan and set in the freezer while you make the topping.

  • Top Layer
    1/4 cup raw cacao butter
    1/4 cup coconut oil
    1/2 cup raw cacao powder
    3 Tbsp maple syrup
    Pinch of sea salt or Himalayan pink salt

  • ​Melt cacao butter and coconut oil over low heat.

  • Whisk in other ingredients until smooth, pour over brownie base and set in the fridge.

  • Remove from pan once solid and slice into small squares and enjoy! 👌😊
